Low Carb Cottage Cheese Taco Dip

I LOVE a delicious taco dip without all the guilt. This taco dip is low in carbs and high in protein!! See bottom of post for carb and protein counts for entire batch and for one (1/2 cup) serving.

Ingredients

  • 16 oz (2 cups) cottage cheese

  • 1 can rotel (diced tomatoes with green chiles), drained but reserving 2 tbsp of liquid

  • 2 tablespoons taco seasoning (I make my own, here is my recipe)

  • 1 1/2 cup cheddar cheese, shredded

Add cottage cheese, rotel, and taco seasoning into food processor. Blend until smooth, scraping sides down once or twice.

Add in shredded cheese and blend for another 2-3 minutes. Scrape down sides if there is any chunks sticking.

Dip can be enjoyed right away with your favorite tortilla chips or dump cottage cheese mixture into container and store in refrigerator for up to 5 days.

This makes approximately 5 cups total. My serving sizes are approximately 1/2 cup so you can get about 10 servings out of this recipe.

The carb and protein count for the ENTIRE batch:

Net Carbs: 35.5g

Protein: 94.5g

The carb and protein count for one (1/2 cup) serving:

Net Carbs: 3.6g

Protein: 9.5g
