Low Carb Jello Cottage Cheese Fluff

Who doesn’t love a delicious dessert without all the carbs!? This recipe you will want to try…plus it is so easy to make!

The ingredients are simple and this recipe takes only 5 minutes to whipped together.

  • 8 oz cottage cheese, I prefer full fat

  • 1 .3 oz package sugar free jello, any flavor

  • 8 oz heavy whipping cream

  • 2 tablespoons sugar free sweetener, I LOVE this xylitol sweetener or this monkfruit sweetener

  • 1.5 quart glass bowl

  • Immersion Blender - I love this immersion blender. It comes with a cup to blend stuff in like smoothies or whipping cream. It comes with a whisk, a frother, and a mini food processor.

Gather all the ingredients. I use sugar free jello packets and use ANY flavor you like. This generic brand box is .44 oz for the box but most other boxes are .3 oz. Either one will work. Cottage cheese I prefer the full fat cottage cheese but you can certainly use the lower fat option. As for the sweetener, you can use any sweetener of your choice, I LOVE xylitol sweetener which has no aftertaste at all and blends in well without being granular.

Add 8 ounces of cottage cheese to a bowl. I used a 1.5 quart glass bowl for this recipe.

Pour the jello mix powder on the cottage cheese.

Mix cottage cheese and jello powder throughly until a fairly even texture. Set aside while doing the whipping cream part.

In a cup add 8 ounces of heavy whipping cream and 2 tablespoons sweetener of your choice. I think this amount is just perfect but you can adjust this to your liking.

Use your immersion blender with the whisk attachment. I LOVE that this immersion blender came with a cup to blend the whipping cream in.

Whip the cream until semi-stiff peaks. When you lift the whisk up (while the immersion blender is off!) there should be a little bit of peaks that are left. This my specific immersion blender it took about 3 minutes to get like this.

Use a rubber scraper to scrape the whipped cream out of the cup. Add to the cottage cheese jello mixture.

Fold the mixture together until it is a consistent look like the picture above.

Cover the bowl with a lid, plastic wrap, or a plate. Refridgerate for at least 2 hours. This can be kept in the fridge for 2-3 days. It will get a little liquidy when sitting but simply just mix and enjoy!!
