Smoked Queso

Who doesn’t love some smokey, cheesy, spicy goodness!? Grab some chips and I will show you how to make the best smoked queso!

First, lets gather all our ingredients. A lot goes into this but well worth it.

I couldn’t decide which meat I wanted, so I divided the ingredients and made two smaller pans. I will give you the list of ingredients and you can simply put them all in one pan or split them up like I did.

Preheat your pellet smoker to 225°. I LOVE my Z Grill Pellet Smoker!!

Ingredients

  • 1 pound ground meat, beef or pork (You can do one or other or a mixutre of both!!)

  • 16 oz block velveeta, cubed

  • 8 oz block monterey jack cheese, cubed

  • 8 oz block pepperjack cheese, cubed

  • 8 oz block sharp cheddar cheese, cubed

  • 8 oz block cream cheese, cubed

  • 1 onion, diced

  • 1 red, yellow, and green bell peppers, diced

  • 4 jalapenos, diced

  • 2 - 14 oz cans rotel

  • 1 can diced green chiles

  • 2 tsp (heaping) minced garlic

  • 2 tbsp taco seasoning (I made my own with this recipe)

  • 2 bunches cilantro, finely chopped

Browning the meat with the onions.

Now that you have all the ingredients together, it is time to start browning the meat.

Reminder: You can do beef or pork or a mixture of both. Since I didn’t know which meat I would like the best I did my meats separately.

In a large frying pan, start browning your meat. Once it has started browning add in the onions.

Continue to brown the meat until thoroughly cooked and the onions have softened.

While the meat is browning, I chopped the bell peppers and jalapenos.

Tip: With the jalapenos, I removed the seeds and white parts so it wasn’t as spicy. But leave as much or as little as you would like based on your spiciness desires.

Add browned meat and diced peppers to the aluminum foil pan.

Add in the cubed cheeses, taco seasoning, garlic, rotel, green chiles, and cilantro (I forgot the cilantro this time!).

Place in preheated smoker and let cook for 2 hours. Stir every half hour or so. As things melt they will mix a lot easier.

The final product is a cheesy goodness. Feel free to play around with the ingredients. Add what you like, leave out what you don’t!

ENJOY with your favorite tortilla chips or on top of some delicious pulled pork (my favorite!!).
